Cinco de Mayo Potluck

Wow! What a way to start another year of Potlucks In The Park. It was raining when you went to school. It was cold and blowing at noon. At two there was hardly a peek of sunshine. But at 5:45 there was not a cloud in the sky and the sun made it feel warm. Somebody sure went to church on this one -- many thanks.

Not only did the sun drive away the rain, it drew out maybe a record crowd. Why, it even drew out a bunch of folks who hadn't quite gotten around to sending in their RSVP. (Now just what kind of a standard are we teaching all these great kids anyway?) But it sure was a lot of fun.

Go ahead and count in the table below, but it looks like 35 families were represented by 93 people. Actually, Teak told me it was really because of all her dog friends - 19 in total - who dragged their humans and friends to the park. If you think these numbers are an exaggeration, just try to count all the faces in the group pictures. I think Mason Escobar gets the prize for the youngest at about 2 months. (I'll stay away from the oldest.........)

The food was really great. First, thanks to Wendy Yee for the core suggestion of Cinco de Mayo and her offer to provide the "foundation" for the feast. Also thanks to Vera Kark, Janet Sloan, Beth Caltagirone & Kim Thompson for their inputs about school and sports activities to try to find a date with a minimum of conflicts. The list of great food would fill the page, and the pictures show most of it, but more than one eater wanted to know about Eric Lipanovich's Mexican Drunk Chicken.

So, with the promise that this is Internet Shareware, we've managed to squeeze the recipe out of Eric - donations of money, or commitments to be part of the 2007 Halloween cast are greatly appreciated.


Drunken Mexican Chicken ( Pollo Boracho)

Amount, Measure, Ingredient, Preparation Method

6 skinless boneless chicken thigh -- cut into serving pieces
6 skinless boneless chicken breast -- cut into serving pieces
1/4 cup canola oil
1 1/4 teaspoons salt
1 teaspoon paprika
3/4 teaspoon fresh ground black pepper
1/2 teaspoon oregano -- Crushed
1/2 teaspoon cumin seeds
4 cloves garlic
1/2 cup chicken broth -- boiled down (or use bouillon)
16 ounces canned tomatoes -- chopped (or substitute fresh ones)
1 onion -- sliced
1 cup Burgundy -- red wine

Heat corn oil in Dutch oven over medium heat. Add chicken and brown well on all sides.

Sprinkle in salt, paprika, black pepper, oregano, cumin, garlic powder and chicken broth. Reduce heat to medium low; add tomatoes, onion, and wine.

Cook, covered, 30 minutes; uncover and continue cooking another 15 minutes or until liquid is somewhat reduced and chicken is done.

Serving Ideas : Excellent when served with brown rice, pinto beans and avocado fruit salad.
